Tex Mex Bowl - Chicken & Rice
Anyone who knows me, knows I fucking love rice. So much so, that I will say that I fucking love rice despite the fact that my family gets faint if I swear. I especially love rice with a protein of some sort and a sauce that ties both food items together - chicken dijon and rice pilaf, orange chicken and fried rice, the list goes on. My friend turned me on to HelloFresh a couple of years ago, which I tried for a few weeks to broaden my horizons when it comes to food and - spoiler alert: I still hate tomatoes - I discovered a couple of recipes that I've come to love and keep in rotation.
This is the Lone Star Chicken Rice Bowl from HelloFresh that I've tweaked to my own specifications, which is a nice way of saying fuck tomatoes because I omit the tomatoes.

- Cooking time: 20-30 minutes
- Make the rice. If, for whatever reason, you are incredibly inept at cooking the literal most simplest food known to man like I am, the box has directions. This is why I use the minute stuff, cause I can't be trusted to actually cook rice correctly, okay, I'm SORRY. Or maybe you're fancy and cool and have a rice cooker and I hate you for that.
- Chop up the peppers and chicken (peppers very small, chicken cubed to the size of your desire, smaller is better in my opinion).
- Heat pan with drizzle of oil on medium-high heat. Add peppers and let cook until softened.
- Add a little more oil and chicken, flip after a couple of minutes.
- In a mixing cup, mix a cup of water and the tex-mex paste and the tomato paste until dissolved, pour over chicken.
- Simmer for ~10-15 minutes.
- Once rice is cooked, add lime juice and cilantro. Not too much of either!! If you're like me you will be possessed by some weird...lime ghost and want to put the whole thing in. Just. Don't do that, okay. And salt to taste.
- Serve chicken on a heaping bed of rice. Top with homemade jalapeño cream sauce.
- Make it look pretty for the snapchat and then mix together into a slop to eat.
